What: As an homage to Palestinian tahini, Zotter has created a crispy, delicious filling made from sesame nougat and crunchily roasted mutton lardons which are caramelised and enhanced with a bit of cinnamon. This filling is then combined with a refreshing chocolate ganache made from white chocolate and some trendy verjuice from young grapes - an ingredient used in haute cuisine as well as the kitchens of the Arab peninsula as an enhancement to a variety of dishes. The whole thing is covered in dark chocolate with a 70% cocoa content. Absolutely sublime, but not for those vegetarians out there. The mutton is of course organic, free-range and from Zotter's very own Edible Zoo.
